What Was FungiVeg?
FungiVeg started as a food-tech startup project to develop a healthy, tasty, and minimally processed meat alternative. By leveraging the natural fibrous texture and nutritional profile of fungal mycelium, the goal was to overcome the limitations of typical industrial "vegan junk" (ultra-processed foods high in additives and sodium) by offering a "clean" product with high nutritional value.
What Was Successfully Validated
- •R&D and Prototyping: Optimization of mycelium growth and fermentation conditions to achieve a meat-like texture and taste.
- •Taste Tests and Feedback: Collection of insights from both flexitarian and vegetarian consumers on flavor profile and texture.
- •Team: Identification and onboarding of a commercial co-founder.
The Tough Decision: Why We Stopped
Following the prototyping phase and with the partner onboard, we built a detailed business plan focused on the costs of setting up a pilot plant and running small-scale production.
However, the numbers highlighted a core issue: in this food segment, unit margins are only sustainable at very high production volumes. Launching a small-scale facility would have led to unsustainable overhead, turning operations into a potential "golden cage." We decided to freeze both the latest prototypes and the project, freeing up time and energy for new challenges.
